Blueberry pancakes

INGREDIENTS
self-rasing flour 135g
baking powder 1tsp
milk 130ml
egg lightly beaten, 1
melted butter 2 tbsp
maple syrup 5 tbsp
blueberries 100g
Sift the flour and baking powder into a large bowl.
In a separate bowl lightly whisk together the milk and egg, then whisk in the melted butter.
Pour the milk mixture into the flour mixture and beat until you have a smooth batter.
Heat a non-stick frying pan over a medium heat and add a knob of butter. When it’s melted, add a ladle of batter. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown.
Heat maple syrup and blueberries in pan until you have a thick consistency. Pour over pancakes and enjoy.
